2018 Jack’s Shiraz was sourced from the family’s Greenock, Moppa Hill & Marananga vineyards. 78% Greenock fruit with a good percentage from Hill Block, which is planted on red-brown earth over red clay to 3ft, then hits the bluestone formation of the hill. 18% from Moppa Block 8 which is sandy soil over orange-red clay with thick gravely quartz stone scattered throughout soil profile. For the first time from the calcareous soils of the Marananga vineyard an inclusion of 4%.
The grapes were de-stemmed and whole berries transferred into open top fermenters. 60% was made in 5 & 8 tonne open tops with 3 pumpovers per day. 40% made in small 3 tonne open tops with hand plunging three times per day. Both receiving an occasional rack and return to chillers for cooling only. After fermentation the wine was then drained to oak barrels and skins were hand dug out of the fermenters into the basket press.
Show Tasting NotesAppearance: Vibrant in colour, dark core with a crimson/red rim.
Aroma: The bouquet shimmers with red fruit. Fresh damson and sweet cherry notes play against the faintest suggestion of dusty oak. There’s spice too: nutmeg and allspice.
Palate: Medium bodied with a soft seductive palate. Gently arching legato phrases of primary fruit, without a skerrick of abrasion. Tannins are beautifully talcy, giving the wine the silkiest mouthfeel.
