Jack’s Semillon Sauvignon Blanc 2016
78% Old Vine Semillon | 22% Sauvignon Blanc | Wild Yeast Fermentation
Semillon is Barossa Valley’s most suited white grape variety and this Semillon component was produced from our old vine vineyard planted to clone 143 in the early 60’s. Clone 143 is early ripening and a shy bearer only producing a small number of bunches per vine with golden berries and intense flavours. This Semillon was handpicked, whole bunch basket pressed to barrel for fermentation and matured on lees for a further 6 months. The time on lees gives extra texture, adding to the mouth feel prior to being blended with the Sauvignon Blanc.
Sauvignon Blanc is the only fruit in which is purchased for Laughing Jack. This Sauvignon Blanc was chosen from a small vineyard on Mengler’s Hill, Eden Valley.

Aroma: Vibrant tropical notes of passionfruit, lychee and grapefruit.
Palate: A classic dry white with a lively citrus kick and refreshing acidity.
