100% Old Vine Semillon | Wild Yeast Fermentation
Semillon is Barossa Valley’s most suited white grape variety in our opinion. This Semillon was produced from our old vine vineyard planted to clone 143 and an old unknown clone in the early 60’s. Clone 143 is early ripening and a shy bearer only producing a small number of tiny bunches per vine and our old unknown clone producing more typical Semillon fruit. 2017 was a cooler growing season and the grapes were handpicked at their optimum along with good natural acidity.
This Semillon once picked was whole bunch pressed to a stainless pallet tank and a barrel for fermentation. The vessels were kept at 12 degrees in a refrigerated shipping container for 4 weeks to complete fermentation. After fermentation, leaving very little sugars, this wine is a dry style and furthermore kept on its post fermentation light lees for an additional 6 months. The time on lees can add freshness, texture, flavour and add mouthfeel to the wine.

Aroma: Bouquet is bright and lifted; pink grapefruit and green figs straddle varietal freshly cut hay.
Palate: Fresh, dry, fruit-driven and uncomplicated; enlivened with driving acidity that urges the tempo of the wine, con brio, through the mouth. Freshly cut green figs dressed with a drizzle of grapefruit follow on the palate. 2017’s La Niña vintage has imbued the wine with both definition and slippery texture. Deliciously refreshing and moreish, it will pair beautifully with freshly shucked oysters, barbecued prawns or a leafy green fig and walnut salad.
