Vintage SV Shiraz 2010

Fortified Vintage Port | Basket Pressed | Wild Yeast Ferment

The first release of our fortified collection, this Vintage SV (single vineyard) Shiraz is sourced from Block 6, located on the eastern slopes of Moppa Hill.
The grapes were hand picked on the 1st April at a Baume of 16.5; de-stemmed, 100% berries crushed and placed into a small 3 tonne open top fermenter. Fermentation was started with wild yeast and after 6 days on skins the desired Baume of 6.05 was reached. A mathematical calculation is used to add the desired amount of aged brandy spirit to make the fortified Vintage Port.

Appearance: Black core with brick red rim.

Aroma: Liquored dark plum, blackcurrant, spice, prune, dark chocolate, liquorice and raisins dominate the nose and subtle hints of aged brandy spirit.

Palate: Very smooth liquored palate with currants, dark chocolate, prune, liquorice and raisins to finish.

Region: 100% Barossa Valley

Sub Region: 100% Moppa Hill Shiraz

Bottled: Unfined & unfiltered on 13/08/2015

Production: 133 dozen

pH: 3.46

Total Acid: 5.70 g/L

Alcohol: 18.60%

Residual Sugar: 76.0 g/L

Maturation: 50% French & 50% American oak hogsheads (1 year old seasoned oak) for 12 months

Cellar Potential: 25 years with careful cellaring

Wine is heat sensitive. During the warmer months we reserve the right to hold orders in instances of extreme heat, until there is a clear path of non-extreme temperatures between us and you. All orders are packed and stored safely in our cellar awaiting better conditions to send the wine when it can be more safely dispatched to you.
