Lily’s Cane Cut Semillon 2012

Hand Picked | Basket Pressed | Wild Yeast Ferment

Lily-Dene is Shawn & Briony’s first born child and seemed fitting to name this new sweet dessert wine after her.
This dessert wine was produced by cutting the fruiting cane which then ends the sap flow to the grapes. The grapes dehydrate which increases the concentration of flavour and natural sugars. After 20-30 days the dehydrated grapes are handpicked and juice pressed out by the basket press then carefully guided through fermentation in seasoned French oak barriques (6 months). The wine then remained in barrel for a further 6 months prior to bottling.

Appearance: Dark Gold

Aroma: Pineapple, old fashioned marmalade with orange peel, honey and toffee; also nuances of apricot, spice and subtle oak characters.

Palate: Smooth and silky texture presenting good concentration of flavours including sweet marmalade, toffee and apricot nectar. The residual sugar level is very balanced with this desert wine and with no cloying sweetness.

Wine is heat sensitive. During the warmer months we reserve the right to hold orders in instances of extreme heat, until there is a clear path of non-extreme temperatures between us and you. All orders are packed and stored safely in our cellar awaiting better conditions to send the wine when it can be more safely dispatched to you.
