Estate Grown | Family Owned | Open Fermented | Basket Pressed
2020 Jack’s Shiraz Cabernet is a classic Australian blend of 60% Shiraz and 40% Cabernet Sauvignon. It was sourced entirely from the family’s Marananga vineyard. The soils are red/ brown earth over calcareous red clay before mixing with fragmented blue shale. 2020 vintage is one of our lowest yielding vintages thus far with grape quantity down 70% on average.
The grapes were de-stemmed and whole berries transferred into open top fermenters. 60% was made in a small 3 tonne open top with hand plunging twice per day. 40% Cabernet which was just on a tonne of fruit was made in a small 1 tonne fermenter, hand plunged twice per day over 21 days. Both receiving an occasional rack and return to chillers for cooling only. After fermentation the wine was then drained to oak barrels and skins were hand dug out of the fermenters into the basket press. The wine is matured with minimal racking until being bottled unfined and unfiltered.
Show Tasting NotesAppearance: Bright crimson/red hue, medium to dark core.
Aroma: An explosion of red berries and blackcurrant fruit make up the abundance of primary aromas. The Cabernet fruit off the vine was very concentrated and certainly showing its stamp on the blend with some nice earthy and cigar box characters. Not to take a back seat either there is dark Chocolate and black olives and finally some subtle nuances of pepper, star anise, bay leaf and sage.
Palate: Medium bodied with red and blackcurrants flowing onto the palate. The lively fruit is matched with the cigar box and dark chocolate flavours. The acidity balance is perfect with classic drying cabernet tannins on the finish.
