Jack’s Semillon Sauvignon Blanc 2015
78% Barossa Semillon | 22% Eden Valley Sauvignon Blanc
Semillon is Barossa Valley’s most suited white grape variety and this Semillon component was produced from our old vine vineyard planted to clone 143 in the early 60’s. Clone 143 is early ripening and a shy bearer only producing a small number of bunches per vine with golden berries and intense flavours. This Semillon was hand picked on the riper side, whole bunch pressed to stainless pallet tanks for fermentation and matured on lees for a further 6 months. The time on lees gives extra texture, adding to the mouthfeel prior to being blended with the Sauvignon Blanc.
Sauvignon Blanc is the only fruit in which is purchased for Laughing Jack Wines. This Sauvignon Blanc was chosen from a vineyard on Menglers Hill, Eden Valley. The Sauvignon Blanc was machine picked at 10 baume, this is on the greener side to give the Semillon, when blended, some fresh aromas and backbone with crisp acidity.
