2021 Stone Quarry Mataro

This is the inaugural release of our Stone Quarry Mataro, sourced from a single vineyard on the southern slope of Moppa Hill. This small 2.5 acre vineyard is planted just below the old stone quarry. The vines are grown in ancient sandy soil over orange clay with abundant quartz stone. But it’s Ironstone that lays the foundation for this hillside vineyard.
The fruit was handpicked on the 7th of April and yielded another small vintage at 1.2 tonnes per acre. 100% de-stemmed and whole berry into small open top fermenters. Traditional fermentation practices with hand plunging twice per day and receiving an occasional rack and return. After 21 days on skins the wine was drained to barrel, the skins hand-dug to the basket press. Matured with minimal racking until being bottled unfined and unfiltered.

Appearance: Medium ruby core with a garnet-crimson rim.
Aroma: Earthy and savoury along with abundant spice; cinnamon, star anise and pepper. The ’21’ vintage delivers pure Mataro aromas, alongside the spice, classic herbal notes, dried lavender, sage and bay leaf.
Palate: Pure balance rarely seen in 100% pure Mataro. Savoury textural fruit and herbal flavours dominate the palate. Balanced acidity, meaty nuances and fine, powdery tannins on the finish.
