2021 Gold Seam Cabernet Sauvignon

The 2021 Gold Seam Cabernet Sauvignon is sourced from a 2.3 acre single vineyard on the southern slope of the Moppa Hill. It has an altitude of 335m and is planted on ancient iron rich sandy soil with shale fragments and quartz stone throughout over friable orange clay. Sustainable vineyard practices are used with a real care for the soil and surrounding natural environment. Naturally a very low yielding dry grown vineyard and produces wine with varietal character and impeccable balance & structure.
Another low yielding vintage with a small 830kg per acre. The fruit was harvested on the 24th of February, 100% de-stemmed and whole berry into a small open top fermenter. The ferment was pumped over 3 times per day in the peak of fermentation with an occasional rack and return. After 18 days on skins the wine was drained to barrel, the skins hand-dug to the basket press. Pressings added back to the free run this vintage. Matured with minimal racking until being bottled un-fined and unfiltered.

Appearance: Deep dark red core with bright crimson rim.
Aroma: A cool to warm vintage brings close to perfect conditions for Cabernet. Powerful and pure built around blackberry, blackcurrant and kirsch fruit. Layers of aromas after the primary fruits; bay leaf, dried tobacco and vanilla pod. Lots of cedar characters and oak spices; cloves and cinnamon, finishes with some earthy notes and licorice.
Palate: The purity of fruit flows onto the palate, mainly blackcurrants and cherries at this wine’s core. Joined by plenty of spice and dark chocolate, alongside subtle cedar and vanilla oak flavour. There’s a sense of latent power here with tight acidity and tight-grained tannins allowing for a long lingering finish.
