52% Grenache | 28% Shiraz | 20% Mourvédre.
The 2019 GSM is estate grown fruit from the Marananga, Moppa Hill and Greenock Vineyards. For the first time the lion’s share of Grenache is from the Marananga vineyard. 43% Grenache soured from the Marananga site with just 9% from the old vines from Moppa, 28% Shiraz from Greenock and 20% dry grown Mourvèdre from Moppa. Each variety adds its own characteristics to the blend – Grenache aromatic red fruits and spice, Shiraz dark fruits and mid palate weight. Mourvèdre completes the balance by adding structure and complexity to the finish.
Majority Handpicked fruit, predominantly de-stemmed. The three grape components all fermented separately are allowed wild yeast to start ferment, cultured yeast is added after approx. 3 degrees of alcohol obtained. Grenache like the Mourvèdre is hand plunged in small open top fermemters. Shiraz ferment was managed mostly with two pumped overs per day. 18 days on skins for Grenache & Mourvèdre, Shiraz 12 days, the wine was then drained to oak barrels and skins were hand dug out of the fermenters into the basket press.
