2017 Gold Seam Cabernet Sauvignon

The 2017 Gold Seam Cabernet Sauvignon is sourced from a 2.3-acre single vineyard on the southern slope of the Moppa Hill. It has an altitude of 335m and is planted on ancient iron rich sandy soil with shale fragments and quartz stone throughout over friable orange clay. Sustainable vineyard practices are used with a real care for the soil and surrounding natural environment. Naturally a very low yielding dry grown vineyard and produces wine with varietal character and impeccable balance & structure.
The fruit was picked on the 2nd of April, 100% de-stemmed and whole berry into a small open top fermenter. The juice was pumped over twice per day with an occasional rack and return. After 18 days on skins the wine was drained to barrel, the skins hand-dug to the basket press. And matured with minimal racking until being bottled unfined and unfiltered.

Appearance: Medium ruby core with brick-red rim.
Aroma: Our inaugural Cabernet has impeccable varietal expression of blackcurrants and dark plums. Classic earthy aromas and a hint of truffles with synonymous cigar box playing a complexing part to the nose. The cooler vintage has allowed menthol and some dried herbs, mainly sage to flourish
Palate: Concentrated and intense black fruits follow on the palate while maintaining beautiful balance front to back. Black/redcurrants are the main feature in the black fruit spectrum along with subtle dark chocolate and liquorice. The oak has integrated well and allowing the intense fruit to shine. Tensioned with a line of mineral acidity and this dry grown vineyard, natural tannins give superb structure and allow the flavours to linger on into the distance.
