53% Grenache | 25% Shiraz | 22% Mourvédre
The 2016 Jack’s GSM blend is estate grown on the south eastern slope of Moppa Hill with an altitude of 335m to 348m. Each variety adds its own characteristics to the blend – Grenache aromatic red fruits and spice, Shiraz dark fruits, body and mid palate weight. Mourvedre completes the balance by adding structure and complexity to the finish.
22% of the Grenache was whole bunch while the balance was de-stemmed. Shiraz & Mourvédre grapes were 100% de-stemmed. All fermented separately in small open top fermenters with wild yeast on Mourvedre only. Fermentation was kept on the cooler side and lightly hand plunged three times per day with a rack and return to chillers for cooling only. After 12 days on skins the wine was then drained to oak barrels and skins were hand dug out of the fermenters into the basket press.

Appearance: Ruby core with crimson rim.
Aroma: A delicious mix of berries – raspberry, blueberry and blackberry dominate at first. Followed closely by aniseed, herbs and mixed spices with floral nuances of fresh violets.
Palate: Medium bodied with red and black fruits carry from the nose to the palate. A touch of earthy, savoury flavours are joined by soft acidity and supple tannins. Balance is the hallmark of this GSM blend.
